The Holiday Cocktail – How to Make It

We present a home-style version of a drink featured on a new menu. It's a large-volume prepared mix that is packed full of tastes of a Christmas time, which makes it ideal for hosting a celebration. Save the extra syrup you can use for morning drinks, puddings, or to mix additional servings of the drink.

The Bikini Cocktail

Yields 10 servings

For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Put all the components inside a pan, heat until it reaches a gentle boil, stirring so the sugar melts. Next, remove from the stove allowing it to cool completely. Transfer to a sterilised bottle, close it and refrigerate it in the fridge, it can be stored for about one month.

Preparing the Batch Mix: Mix every liquid ingredients in a big jug, let it rest for 60 minutes, then filter it best through cheesecloth, to ensure it's perfectly clear.

For serving: Measure 85ml from the batch mix into a stirring glass filled with ice, and agitate carefully for a minute until cold. Strain into a cold coupe glass or similar, garnish with the cranberries and complete it using a quick spritz of the essential oil above the glass.
